On this food tour, we’ll explore the most iconic flavors of the Central Valleys region. From ancestral drinks like tejate to iconic dishes like tlayudas, mole, and traditional shaved ice, this experience is a deep dive into Oaxaca’s culinary soul.
We’ll start the tour from Oaxaca City, heading to communities that proudly preserve their culinary traditions. In San Andrés Huayapam, you’ll discover the famous tejate, an ancestral drink made with corn, cocoa, cocoa flower, and pine nuts. You’ll learn about its preparation process and chat with master tejate makers who have preserved this tradition for generations. In Tlacolula de Matamoros, we’ll discover pan de cazuela, a soft and aromatic bread with cinnamon, and try nieves with unique flavors like mole and chapulines. We’ll also enjoy a buffet of typical Oaxacan food, celebrating the diversity of local ingredients and techniques. In Teotitlán del Valle
We’re heading to Rey de Matatlán, an artisanal mezcal factory. We’ll learn about the production process, from the agave to the final distillate, and we’ll taste different varieties guided by mezcal masters who honor the land at every step. And finally, at the iconic Mercado 20 de Noviembre in Oaxaca City, where the aromas, colors, and flavors remind us that Oaxacan cuisine is much more than food: it’s legacy, identity, and celebration.
